THE HIGH ACIDITY OF LOS PEDROS TINTO ROBLE REVEALS THE ALTITUDE AT WHICH THE VINEYARDS GROW IN THE MUNICIPALITY OF GALERA, GRANADA
Granada, February 6, 2020.- Bodega Carayol & Castellar is found in the municipality of Galera, Granada. The winery is better known for its sparkling wines than for the other wine styles it produces. As a result of carrying out elaboration methods with a personal touch, using the traditional method and lees ageing, Bodega Carayol & Castellar has achieved recognition in international competitions.
The grapes used to make Los Pedros Tinto Roble are Tempranillo, Cabernet Sauvignon and Garnacha, which ferment at a controlled temperature and then the wine rests for three months in French oak barrels.
In appearance, Los Pedros Tinto Roble is clear, medium in intensity, ruby in colour progressing to violet on the rim and there are some traces of tears on the sides of the glass. On the nose, the wine is clean, light in intensity and shows mainly primary aromas, as well as hints of aromas resulting from the French oak. The aromas of red fruit are redcurrant, raspberry and red plum. In addition, there are some rather resinous and balsamic notes.
Moving on to the palate, this red wine is dry, high in acidity, medium (-) in tannins, medium in alcohol, light in body with a medium (-) flavour intensity. The flavours present reflect the aromas on the nose, that is, mainly primary flavours of wild red fruit such as redcurrant, raspberry and red plum. The flavours from the time spent in French oak barrels are of balsamic, resin and smoked wood. The finish is short.
In conclusion, Los Pedros Tinto Roble is acceptable and is best drunk with food high in protein, salt and umami to balance the high acidity of the wine. It would make a good pairing with meat stews or a variety of cheeses and cured meats.
